Nicolay is a partner in the super famous Burgundy house called Chandon de Brialles and this line up is his little personal side hustle. And for a side hustle he absolutely SLAYS. He was one of the first winemakers to try alternative and more natural treatments in Burgundy. Ways of controlling pests and invasive species without the use of chemicals. Of course now, this is becoming more and more common in Burgundy because the resulting fruit makes incredible wine. One example of something he adopted early on is the now common technique of using milk to treat powdery mildew. (btw powdery mildew is a disease that affects grapevines and can very negatively impact not only the yield but the quality of the grapes. A conventional winery will use a chemical combatant. ) Bouzeron is a tiny appellation on the edge of the Loire and Burgundy and is most commonly known for growing white wine made from Aligote. It's an absolutely delicious summer wine that is serious, zesty and balanced. It’s perfect.
