Raj Parr, former world renowned Somm turned farmer and wine maker, he is making major moves with his fully functioning farm in the central coast in and around San Luis Obispo. This is his Printemps Pinot and it's absolutely divine. Pinot Noir is maybe my favorite red wine grape because it takes true talent and great terroir to coax the best out of its fruit. The Brij pinot is lighter. It’s fruit forward. It’s juicy in a dripping popsicle type way. It’s all wild strawberry and rose petals. Raj uses carbonic maceration as the fermentation method, which gently presses the grapes while depriving them of oxygen in order to gain a buoyant and super fresh outcome. The wine is bright, it feels alive, it feels like a budding cherry tree. Honestly, cherry trees in bloom are something I miss the most about living on the east coast. This is Printemps aka Spring. And it quite literally is!!!
Serving temp: Cellar temp, around 65 degrees, you can also chill this down a bit more!
Pairing: Fried chicken; roasted salmon; spring pea risotto!!
