The wines from Chantereves come in once a year and they are always solid gold and hit straight to my heart! They are very cult-y in the somm community and are rather hard to get your hands on. The winemakers are trained oenologists, passionate farmers and lovers in their hearts. Tomoko is a Japanese woman married to a man from Burgundy named Guillaume. He does the farming and she does the winemaking once the grapes hit the cellar. The cellar is tiny, the production is even smaller but an abundance of passion is what drives the real success of these wines. This pinot noir is balanced with mineral edges, texture and fruit throughout. It’s a real glimpse into the exciting directions that Burgundy is heading in!
Serving temp: Cellar temp around 65 degrees, nobody likes hot red wine! Store in a dark and cool spot.
Pairing: Ratatouille on toast; eggs Benedict; Fried chicken
