Pomerol is an area of Bordeaux that is rooted in the dominance of Merlot grape production over cabernet sauvignon. Pomerol is a very unique and special plateau of sandy and iron rich soils within Bordeaux.  This wine is *peak right bank Bordeaux.* Bordeaux is a funny region because its classification of how wines are valued was set forth in the 1800s and of course lots has evolved and changed. It’s generally thought of as being two areas on either side of a river: the right bank and the left bank. Generally speaking the left bank is more cabernet dominant and the right bank is more merlot. Also the left bank has more first growth Chateaus but to be honest, I am not sure what that even means anymore. Two brothers, part of a younger generation that is coming up in Bordeaux run this estate. The wine is balanced and soft, as you take a sip it opens up to the reality that there are many layers to this wine because of its time to age and settle.  Definitely important to store this wine correctly! But drink it now!

Serving temp: Cellar temp around 65 degrees, store in a cool and dark spot!
Pairing: A classic and epic Steak Frites would be so divine!
