I love when Chardonnay really turns it out. Domaine Oudin is one of those special bottles that always comes out swinging, no matter the vintage. Isabelle and Natelie are the sisters who have taken over the Domaine from their parents and are working with amazing seventy year old vines that are planted on perfectly rolling hills. It really feels like they are translating the vines with the amount of energy and texture that their wines attain. For this Les Serres cuvee, they do extended aging on the lees. What are lees, you might be wondering. Well, post fermentation it's the aftermath particles that remain. It’s dead yeast cells, remnants of skins, it's not big chunks, but these little components do help increase flavor, texture, creaminess and sometimes a nutty energy. In this case, the extended aging increases the texture and energy of the wine, it expands the finish and takes this chardonnay on a raging pony ride down a gorgeous beach. HELL YEAH! Chablis is also the most northerly area to grow Chardonnay in Burgundy, so you get the dynamic of the wine still having that tight, fresh energy.
